Vanilla Sponge cake

 

Vanilla Sponge And Chocolate Sponge:

The base of a cake is a vanilla sponge made with Eggs, Sugar, Essence, Flour, Cocoa powder for chocolate sponge, and make it with a quick and easiest method. The sponge is a base of all types of cakes.

Recipe for ½ kg cake Vanilla sponge

  • Eggs - 10 nos.

  • Sugar - 300 gm

  • Flour - 300 gm

  • Baking powder- 10 gm

  • Vanilla essence- ½ tsp

  • Baking temperature- 200 Celsius for 12 to 15 minutes.

Why separation of eggs?:

If you are making in small quantity it's very hard to whisk and raise the volume of eggs so the easiest and fastest way is to separate the egg white and egg yolks.

Beat the egg white with sugar make a soft peak of egg white add egg yolks and fold the sieved flour and baking powder and place the mixture in the mould and bake on 200°C for 12 to 15 minutes.

Beat the eggs and sugar together with whisk till the egg will raise the volume, always check your bowl before starting the beating method. It should be dry otherwise the eggs will not raise the volume after adding vanilla essence and finally add the sieved flour and baking powder and fold the mixture by hand. Pour the mixture in the greased mould and bake it at 200°C for 12 to 15 minutes. This is the exact time in which the sponge will become well done.

Chocolate sponge:

                Beating the eggs and sugar it will take a long time because the quantity is very less than use a different method separate the egg white and egg yolk beat the egg white with the sugar with a wire whisk and when it will become soft peak then slowly add the egg yolk and whisk it properly and then the rest is same.

Recipe :

Eggs - 10 nos.

Sugar - 300 gm

Vanilla essence - ½ tsp

Flour - 250 gm

Cocoa powder - 50 gm

Baking powder - 10 gm

Baking temperature -    200 °C 12 to 15 minutes.

Method :

  The fastest and easiest method. Separate the egg white and egg yolk, place the egg white in a clean and dry bowl, and beat the egg white with sugar till the egg white becomes soft peak. Meanwhile sieve the flour, cocoa powder, and baking powder together, check the egg white if it has become soft peak add egg yolks and vanilla essence slowly. And beat the mixture by whisk till 1 to 2 minutes then add the dry mixture and fold it slowly. Then pour the mixture in a greased mould and put in the pre-baked oven at 200 Celsius for 12 to 15 minutes. In 10 minutes once check the sponge if it's ready u can take it out from the oven.

   A sponge is not a cake. Basically you can eat it dry, some people use this as a tea cake but it's a difference between sponge and tea cake. The sponge is a base of cream cake. After baking the sponge a few hours later you can use the sponge for the cream cake.

The vanilla sponge you can use for all types of pastries and cakes except chocolate and red velvet cake.
The chocolate sponge you can use for chocolate pastries and chocolate mousse cake.
