Water and Oil: Bring the mixture in a liquid consistency and shining in your sponge.
Milk : It gives a proper fat ratio to your sponge.
Sugar: Sugar gives the taste more important, and when the sugar gets caramelized it gives the color to the sponge.
Flour: Flour reduces and absorbs the liquid from the mixture and gives the perfect volume to the mix.
Baking soda and baking powder: With the help of these two ingredients your sponge become soft and spongy because these are raising agents.
Vanilla Essence : Vanilla essence gives the perfect smell to vanilla sponge.
Ingredient for Egg less Vanilla Sponge Cake:
Water: 440 ml
Milk: 175 ml
Sugar: 900 gm (Grounded)
Oil: 300 ml
Flour: 700 gm
Vanilla Essence: 1/2 tsp
Baking powder: 20 gm
Baking soda: 20gm
(Vanilla bean or Vanilla essence is not so necessary for an eggless sponge but if you will use it reduce the essence of flour.)

Preparation:
Sieve the all-purpose flour along with the baking powder and baking soda and preheat the OTG oven at 185°C. Grease the sponge mold.
In a mixing bowl put water and milk add grounded sugar and mix it till the sugar dissolves.
Add oil and mix it constantly, don't add the oil before otherwise sugar is very hard to dissolve.
As soon as add the dry ingredients and fold the mixture properly.
As soon as the mixture is ready put for baking don't keep standby for a long time.
Place the mixture in the greased cake mold and put the mold in the oven for baking.
Check the baking after a time duration. Check the sponge with the tip of the knife or a toothpick keep the texture of the sponge will be moist and soft.
Let it cool after a few hours remove from the mold and use for your delicious cakes and pastries.
If you will make the sponge a day before then also you will found the same texture, soft, and moist

Eggless Vanilla Sponge cake is always heavier than a normal sponge cake. But with the help of this recipe, you will get the same soft and moist texture in the sponge.
Note:
Do not keep standby the mixture for a long time after mixing finished otherwise the sponge will not become soft and spongy.
The cooking oil which you are going to use in mix carefully the oil not suppose to be too smelly like do not use mustard oil.
