Ginger Bread Cookies
Ginger Bread Cookies:
In the end of the year one of the most important and favorite festival is Christmas, and we celebrate it with full of enthusiasm. Different nationality celebrate it with different style. Ginger Bread Cookies also one of the best and common dessert we make during the Christmas.
Ingredients:
Molasses or Jaggery: 125 gm
Sugar: 100 gm
Water: 70 ml
Butter: 2 Tbsp.
All-purpose Flour: 2 cup
Ginger powder spices: 2Tbsp
Baking powder: 1/2 Tsp
Baking soda: 1/2 Tsp
Egg: 1 no
Vanilla essence: Few drops
Do not make the Ginger bread cookies dough like a normal cookies dough. We have to make the dough with the cooking method, like we have to cook Molasses or Jaggery and sugar so it can bind the dough very nicely and you can use the cookies for a long time (Approximately 1 month)
Normally in most of the Pastry mixing we put the eggs before flour but in this recipe we put eggs after flour so its bring the richness in your Ginger Bread Cookies dough.
Method Step By Step:
Make the soft butterscotch sauce with Molasses or Jaggery, Sugar and Water. In a pan put sugar Water and Molasses and cook it on a low flame.
As soon as the mixture became caramelised remove from the flame and add butter and stir the mixture continuously. Rest the mixture for two minutes.
Add sieved flour, baking powder and baking soda and mix the dough nicely.
Add fresh eggs and vanilla essence and knead it and make a soft dough.
If the dough is sticky not to worry when the caramel temperature will go down slowly the dough will come in a proper consistency.
Mix nicely and give rest the dough for 15 to 20 minutes and let the dough completely cool down.
Meanwhile preheat the oven at 165°C arrange the baking tray with parchment paper and make ready fancy shapes cookies cutter.
Dust little flour on the table put the cookies dough and roll the dough with the help of rolling pin and roll dough to 3 to 4 inches thick.
Cut the cookies with your fancy cookies cutter and arrange on the baking tray in line and bake in your preheated oven at 165°C for 8 to 10 minutes.
Bake the cookies nicely remove from the oven and let it cool down.

You can decorate your cookies in your own style with Royal Icing, White and Dark chocolates, Fondant etc.
