the recipe I am going to show you is without the cream cheese frosting recipe and without the cream topping, the carrot cake is very soft and moist. Making the mixture no required a stand whisk you can make the mixture easily with a hand whisk.
Just mix all the dry ingredients, add the grated carrot, Add fresh eggs and slowly mix the oil, and bake on a preheated oven at 180°C for 40 minutes.
Ingredient to make Carrot Cake:
Flour: 180 gm
Cinnamon powder: 5 gm
Baking Soda: 7 gm
Salt: 5 gm
Castor sugar: 300 gm
Chopped Walnut: 15 gm
Grated Carrot: 250gm
Fresh Eggs: 3 nos
Oil: 220 ml
Method Step By Step:
Preheat the oven at 180°C and grate the carrot and squeeze it a little bit and keep aside.
Take all-purpose flour, cinnamon powder, baking soda sieve it in a bowl.
Add salt and sugar and mix it a little, try to use castor sugar or icing sugar so it's mix in the mixture easily.
Add grated and squeezed carrot and chopped walnuts mix with the dry ingredients, add fresh eggs and mix them properly.
In the last add oil slowly and mix with the other hand constantly. do not overmix the mixture.
Pour the mixture into the greased cake mold and put in the oven and bake at 180°C for 40 minutes.
Check the cake with a toothpick or a tip of a knife if need to be more cook so bake a little more.
Basically, carrot cake always served with cream cheese frosting. You can use the same mix for the cupcake also, the carrot is the main ingredient in the carrot cake. Additionally, you can add raisins and chopped pineapple also in the mix. The softness is supposed to same as a Vanilla Poundcake.
